<p>Preheat oven to to 425°.</p>

<p>Add eggs, sugar, cream cheese, sour cream, heavy cream, lemon juice, vanilla, and flour to mixer. Beat (on low to to low-medium speed) thoroughly, until completely smooth</p>

<p>While cake mixture is beating, make the crust.</p>

<p>Mix crust ingredients together in small mixing bowl. Pour into 9&#8243; spring form pan, pressing into place with your fingers or the back of a spoon. Chill in refrigerator for 15 minutes.</p>

<p>When crust is cool, and cake is thoroughly mixed, pour batter into the pan over the back of a big spoon, so the batter does not disturb the crust. Let it rest for 5 or 10 minutes.</p>

<div class="recipesteps"><strong>Step 1:</strong>For crust: Mix the 2 T sugar with crumbs. Add melted butter. Place in a 9&#8243; springform pan. (Mixture will go at least 1&#8243; up the sides.) Chill this crust in the freezer while you make the filling.</div>
<div class="recipesteps"><strong>Step 2:</strong>Filling: Preheat oven to 450. Beat the cream cheese with sugar, eggs, vanilla and cornstarch. (A food processor works great for this.) Blend until very smooth. Add the sour cream and almond extract. Pour into the chilled crust. Bake 10 minutes.</div>

<div class="recipesteps"><strong>Step 1:</strong>With mixer at high speed beat cream cheese until smooth, about 5 minutes. Combine sugar with flour. Reduce speed to low; beat sugar mixture into cream cheese, 1/4 cup at a time until smooth, about 3 minutes.</div>
<div class="recipesteps"><strong>Step 2:</strong>In bowl stir together eggs, sour cream, heavy cream, yolks and vanilla until smooth. Gradually beat egg mixture into cheese mixture until just incorporated. Pour batter into a prepared crust. Place pan in large baking pan on oven rack; fill baking pan with water halfway up sides of springform pan.</div>

2 cups Graham cracker crumbs<br />
1/4 cup Sugar<br />
6 tablespoons Butter, melted</p>

2 1/4 pounds Cream cheese — room temp.<br />
1 2/3 cups Sugar<br />
5 Eggs, room temperature<br />
1 cup Bailey’s Irish Cream<br />
1 tablespoon Vanilla extract<br />
1 cup Semisweet chocolate chips</p>
<p>COFFEE CREAM:<br />
1 cup Chilled whipping cream<br />
2 tablespoons Sugar<br />
1 teaspoon Instant coffee powder<br />
Chocolate curls as garnish</p>

<div class="recipesteps"><strong>Step 1:</strong>For Crust: Preheat oven to 325 . Coat a 9 inch springform pan with vegetable cooking spray. Combine crumbs and sugar in pan. Stir in butter. Press mixture into bottom and 1 inch up the sides of the pan. Bake until light brown, usually about 7 minutes. Maintain oven temperature at 325.</div>
<div class="recipesteps"><strong>Step 2:</strong>For Filling: Beat cream cheese until smooth with and electric mixer. Gradually add sugar, then eggs one at a time, then Bailey’s and finally the vanilla. Sprinkle half of the chocolate chips over crust. Spoon in filling. Sprinkle with remaining chocolate chips. Bake until cake is puffed, springy in the center and golden brown, about 1 hour &amp; 20 minutes. Cool cake completely in refrigerator.</div>
